Sang Kee opens early at 6:30am to catch the breakfast crowd and doesn't shut its doors until 9pm. But with so many different types of congee on their menu, you could sit there all day and still fail to try them all. Clearly, Sang Kee is serious about congee. First comes the soup stock: lean pork bones and dry scallop simmered for four hours.

The basic rice porridge is then made by boiling Thai rice and bean curd sticks in the savoury stock for at least three hours. The method changes according to the season, as people may want a thicker, heartier meal in winter. Then there are the additional ingredients: choose from fish belly, tail, bones or head; pig heart, kidneys, liver or tripe; pork meatballs; beef; chicken; squid and various green vegetables. Lastly, the congee is complemented with a small bowl of fresh ginger, spring onion and soya sauce to enhance the taste. This family business, owned by the Au brothers, was first opened by their father over 40 years ago, and is still going strong.
