As a gesture to gain further experiences, Gaetano worked hard and endured many tiring days and nights while working in Kempinski Hotel San Lawrenz, Gozo, Malta. He started as a Commis de Cuisine and got promoted to become the restaurant’s Chef de Partie. After this, he moved on to join Sheraton Jumeirah Resort and Towers in Dubai, United Arab Emirates, where he obtained five star hotel experience in Dubai. He was designated as Sous Chef and was in charge of the Italian Ciao restaurant. He was responsible for all daily operation of the restaurant, maintaining the standards of food purchasing, preparation, quality and hygiene and as well as decorations at the restaurant. In the absence of the Executive Sous Chef and the Executive Chef, Gaetano will take charge with the operations of the restaurant. In 2014, his hard work finally paid off as he was appointed the Italian Chef for Hilton Labriz, Seychelles, Silhouette Island. His main objective for moving was to share his experiences with others.

Marcello Fabbri (born 1970 in Rimini) gained his first experience at the age of 9 working in the kitchen of his Aunt Maria’s hotel in Rimini. Marcello has been fascinated with food since this young age, when he would help his aunt in the kitchen of her small hotel. The Italian quickly acquired a taste for the culinary arts and at the tender age of 13 he resolved to make a career out of his passion for cooking and began training at Rimini’s state catering school. Following his passion, Marcello enrolled the cooking school and graduated at the top of his class. After his day classes, Marcello would work at Rimini’s finest restaurant - the “Caffè delle Rose” under Chef Gino Angelini, today well-known as the best Italian chef in Los Angeles. Marcello followed periods in Milan under Chef Gualtiero Marchesi, in Sardinia and in Munich under Chef Mario Gamba, who was in the process of opening two first-class Italian restaurants.
From the Bavarian capital, Marcello moved to Weimar’s historic Hotel Elephant in October 1993. In his capacity as chef at the Anna Amalia Restaurant, he soon made a name for himself in gourmet cuisine circles, the Anna Amalia establishing itself as the top gourmet restaurant in the eastern part of the enlarged German Federation. “Der Feinschmecker” magazine included the Amalia on its list of ten best foreign restaurants in Germany (FFFF), the “Gault Millau” gourmet's guide gave Marcello’s cuisine an outstanding 16 points and the Michelin Guide has thirteenth in succession awarded Marcello Fabbri and his team one of its coveted Michelin stars. In 2007, he was awarded as one of the yearly “Star Chefs” by Lufthansa and he exclusively created menus for Lufthansa First Class passengers.
During his twenty years of professional career at Anna Amalia Restaurant, he has served some prominent guests, including German Chancellor Schroder, Russian Federation President Vladimir Putin, the Belgian and Luxembourgian royal couple, past President of Italy Oscar Luigi Scalfaro and American singer Jennifer Lopez.
Although hailing from Thuringia, in the middle of Germany, Marcello Fabbri is a true Italian chef. He proudly claims that his signature dish is Risotto, and his cooking principle is 'Italian Simplicity.'
Marcello Fabbri has always been driven by his natural curiosity for food, cooking and discovering international flavours, and it is obvious that this dynamic young chef is living and sharing his life's passion every time he steps into the kitchen. With Marcello being in the kitchen, it seems nothing would go wrong!
When he is not pursuing his love of cooking, Marcello enjoys his time collecting Bonsai trees and diving.

Villa Danieli, an inviting, free-standing trattoria styled after a country home is proud to offer brunch, a combination of breakfast and lunch eaten usually during the late morning and can be extended until 3pm, beginning January 24th, 2016 for every Sundays.
The hotel’s food and beverage team has come up with a solution for those who prefer to sleep in slightly later than usual on Sundays. They can now look forward to enjoying a wide selection of fresh baked pastries and antipasto, a la’-carte dishes and fruits, desserts and free flowing Prosecco (the famous Italian sparkling white wine) from 11am till 3pm. The Sunday Italian Brunch is priced at MYR238 nett per adult.
The salad and antipasto bar serves appetisers of the chefs’ creation such as Confit Baby Octopus with Kalamata Olive, Chargrilled Cod with Potatoes, Cannelini Beans with Baked Salted Ricotta Cheese and EVOO, Homemade Smoked Salmon with Capers, Beef Carpaccio with Mustard Dressing and a whole lot more! An assorted selection of freshly shuck oyster, Boston Lobster Ravioli with Shimeji Butter Sauce, Honey Pumpkin with Gorgonzola Soup, Red Mullet with Garlic Crostini and Steamed Fresh Mussel with White wine will be presented as well while you wait for your main course.
The main a la’-carte dishes for selection in this Sunday Italian Brunch includes Homemade Squid Ink Fettucine Aglio Olio with Salmon Roe, Sauteed fresh Clam with Garlic, Corriander and Saffron Jus, Rosemary Marinated Lamb Rib on Roasted Garlic Potato, Shallot Red Wine Sauce and Dried Fruit Salsa and Grilled Loin Strop with Parmesan-Potato Pave, Balsamic Braised Yellow Onion and Porcini Jus.
