For diners who prefers to indulge in the extensive à la carte menu, delight in timeless classics ranging from Rainbow Fruity Wasabi Salad Tossed Phoenix Prawn, Double Boiled Chicken Consommé with Sliced Fish Maw, Tiger Grouper and Sweetened Chilled Silken Mango Cream, Pearl Sago with Crushed Thai Pomelo and assorted Dim Sum to name a few.
Double Boiled Pigeon With Chinese Ham and Baby Cabbage
This dish looks simple, is light with deep rich flavours and easy to digest, which is just right for any meal and is very nutritious.

Poached Chicken With Spicy Garlic Sauce
Another staple Chinese New Year dish. This is true Chinese cuisine that is preserved throughout generations. The soft, tender and moist chicken soaks up all the spices that gives out a rather intense flavour, it is basically a celebration in your mouth.

Deep Fried Pork Spare Rib and Berries With Haw Berry Sauce
This is a very artistic rendition of yet another traditional dish but in essence, pays homage to the original. Tender pork meat with a whimsical twist to it. The pic below shows a very characteristic in chinese cooking to a time where fresh ingredients are hard to come by, yet they are always able to make the most out of everything.
Ingredients for the dishes above

Fried Pomfret with Braised Roasted Pork Belly and Cherry Tomatoes
This dish is out of this world and look gorgeous. The sauce is simply bursting out of bounds with flavours, with a tang of acidity with savory twist, with a kiss of sweetnest, blanketing the fish which is soft and crunchy at the same time. It really goes well with hot soft rice.

Crisp Fried Prawn with Pumpkin and Salted Egg Yolk Mousse
This is simply an awesome dish. It is supposed to depict luxury with it's "golden" appeal. The dish encompasses all the flavours and texture of Chinese cooking. Fresh succulent prawn quick deep fried then bathed in savory egg yolk. It is simply a winning combination

Slow Boiled Clay Pot Rice with Assorted Wax Meat and Chestnut
This is a very filling meal, lots of carb, paired with sweet and savoury chinese pork sausage and chestnut, with lots of chive. This has so many levels of taste and texture, that it is simply mindblowing.

This is glutinous Rice Dumplings in Sweetened Soya Milk and Ginger Juice with Japanese Sweet Potato Gold Coin Chinese New Year ‘Nian Gau’. What better way to end an epic meal, with a equally luxurious dessert. Here, tradition is yet again preserved, everything is sweet yet not to empowering. so soft and blanketing your mouth with that silky smooth texture.
